The National Restaurant Association recently released its annual survey of 1,800 chefs. In 2013, fermentation is the #1 top trend by category for preparation method followed by pickling. This is the reverse of 2012, meaning that fermented foods, like kraut, are moving up in popularity amongst chefs. In addition, pickled vegetables hit the charts at #5 in the sides & starches category.
