Vegetables are increasingly taking over the center of the plate at restaurants, as consumers’ demands for healthier dishes and alternatives to meat resonate with chefs. Veggie offerings on restaurant menus are up 11% over three years ago, according to Technomic, and certain trendy greens like kale have jumped to the head of the pack. “Culturally, vegetable dishes are becoming the new normal,” said celebrity chef Cat Cora.
